The challenge: If you bake Sourdough bread, you may have noticed it doesn’t always turn out. You can do the same recipe every day and still get varying results. That’s because the way bread rises and forms is greatly influenced by the environment. Fluctuating factors like humidity, temperature, barometric pressure and elevation all influence the results of your bread.
The solution: Crust & Crumb reads your local environment — temperature, humidity, barometric pressure, and elevation — and adjusts your sourdough recipe in real time. Most baking tools ignore the variables that actually change day to day, and almost none account for elevation, which dramatically affects fermentation speed and dough hydration. Tell it your flour weight and target hydration, and it tells you exactly how much water to use, what temperature to mix it at, and how long to bulk ferment.
